Festival Sausage Bake



1 pound rigatoni pasta
2 tablespoons vegetable oil
1-1/4 pounds hot Italian sausage, cut into 1-inch pieces
2 large green bell peppers, cut into 1/2-inch strips
2 medium onions, cut into 1/4-inch slices
2 teaspoons minced garlic
2 jars (26 ounces each) spaghetti sauce
1/4 cup grated Parmesan cheese
1 cup (4 ounces) shredded mozzarella cheese


Preheat the oven to 350째F.
Cook the pasta according to the package directions; drain.


Meanwhile, in a large skillet, heat the oil over medium-high heat.
Add the sausage, peppers, onions, and garlic, and cook for 15 to 20 minutes, or until the sausage is cooked through and the peppers and onions are tender, stirring occasionally.


Drain the sausage mixture, and place in a large bowl. Add the pasta, spaghetti sauce, and Parmesan cheese; mix well. Pour into a 9" x 13" baking dish, cover with aluminum foil, and bake for 20 minutes.


Remove the foil; sprinkle the sausage bake with mozzarella cheese then bake for 10 minutes, or until heated through and the cheese is melted.

This was shared with me a long time ago, I have never made a lot of these. I just posted what friend's sent to me for my site.

Many times, I don't have what the recipe calls for and I substitute or just make do without!

:cry:I love Italian Sausage,especially Italian sausage sandwiches with the bell pepper and onions. I also love cooking and eating. I really like many of your recipes, and this one too sounds so yummy. Have even made some of your recipes and was always very pleased at how good they were.

My problem is eating those good things to eat. I do not overindulge so much, as much as I love eating such rich foods (being a southern american doesn't help much, where it is said that we fry breakfast,lunch,and dinner.) I can remember eating pretty much what I wanted of the three squares growing up and even until I reached forty and stayed the same weight. I never was much overweight but about 10 lbs. Since then I am finally learning that I unfortunately cannot eat like that anymore without ballooning 50 to 60 lbs. plus above my average weight.
I remember once while I was at work at 25 yrs. old saying to a co-worker...I am dieting to lose 10 lbs. (guess I'd gained and lost 10,000 lbs. /the same 10 lbs.) over the years. She was fifty-ish and looked down at me thru her bi-focals and said, "You better eat while you can because one day you may not be able to eat,lol" I see, I said, you mean cottage cheese and jello then? She said that's right. I'll never forget that.

I am now 55 yrs.old and have finally learned that I cannot eat like that anymore, except on rare occasion. Makes me sad. I'm not eating cottage cheese and jello for the main course yet but close enough to make me grieve
for the loss of eating good old fashioned mom's cooking, as I once did.
Now it is baked chicken breasts and steamed broccoli sometimes a tasteless salad without dressing or a baked potato with a lil' lemon juice, or cottage cheese on it. A small cup of fruit. Eating like I used to means obesity,high triglycerides,high cholesterol,and high blood pressure. Oh, well things could always be much worse. lol

BTW, thank you for sharing your recipes. I still can cook them and feed my family. And they aren't fat. Your recipes always give me something good and new to prepare. Pssst, I'll just try a bite or two.

LOL This recipe sounded so good to me that I could just taste it and imagine the thick italian (toasted and buttered) cheese toast, and a green salad with lots of my favorite creamy salad dressing, which could be a problem for me.
Wow, maybe I am a food addict too. But it's so gooood. :D
